For its dough:
10 eggs
125 gr. granulated sugar
125-gr flour
Half a glass of water
3-teaspoon of Swelling Powder
1-tablespoon of Ovaleks
A pinch of vanilla
2-teaspoon of cocoa
For its cream:
500-gr milk
100-gr flour
125-gr granulated sugar
1 egg
1 yolk
4-tablespoon of butter
A pinch of vanilla
80-gr Kafkas Mashed Chestnut
For dressing:
150-gr liquid cream
200-gr bitter chocolate
50-gr white chocolate
Whisk the egg, powdered sugar, flour, water, swelling powder, ovaleks, vanilla and lemon rind in mixer for 5 minutes to make cake. Pour half the dough into a lubricate tray, add cocoa to the rest and pour into another tray. . Let it cook in already warmed oven at 180 0C temperature for 15 minutes. Boil milk, flour, powdered sugar, whole egg, and yolks, butter and vanilla for the cream. Pour the mixture in a large, shallow, open tray and let it cool. Whisk cooled cream together with mashed chestnut in a mixer for 3 minutes. Divide white and black cake in the middle. Place a layer of white cake and spread prepared cream over it. Place black cake over it and again spread cream over the top. Repeat this for the rest cakes. Then let it rest in refrigerator at +4˚ C for 1 hour. For its dressing, boil the cream and add bitter chocolate to it; whisk in blender for 4 minutes. Pour the prepared dressing over the cake; and then let rest at +4˚ C temperature for 10 minutes. Adorn over the cake by melting white chocolate. |
