CHOCOLATE CREAM-CAKE COATED WITH CHESTNUTS FOR DIABETICS (for 6 to 8 people) :

Egg white of six eggs
20-gr sweetener
¾ water glass of flour
1 tablespoon of cocoa
250-gr Kafkas Light Chestnut Mash
For its cream:
250-gr light bitter chocolate
425-gr sugar-free cream
Egg white of six eggs
Half a tea glass of water
50-gr sweetener
Whisk egg whites with a blender until it foams. Add sweetener, flour and cocoa and again whisk it. Lubricate cake mold and pour the mixture in it. Let it cook in already warmed oven at 220 0C temperature for 6 minutes. Melt chocolate with bain-marie style for cream. Whisk the cream in mixer while whisking egg whites until it form foams. Boil sweetener with water. When the cake is lukewarm, spread mashed chestnut over it. Cover the top and sides of the cake with cream. Then let it rest in refrigerator for 3 hours and cut into slices serve it.
Remarks from the cook:
If you wish you can add melted milky diet chocolate to the cream by mixing it so as to give color.
